Recipe Of The Day: Pickled Beets

Having pickled beets in your fridge is like keeping your bar stocked with a nice bottle of whiskey, it means you'll always be prepared for any last-minute entertaining. Pickled beets can be served tapas-style alongside cured meats and cheeses, or they can quickly dress up a salad. They also make a great topping for fish recipes, quickly brightening up flavors.

Considering how easy it is to make pickled beets -- no more than 30 minutes and a handful of ingredients -- you have no excuse to not have them stocked at all times.
