Recipe Of The Day: Tofu Salad

If you're a fan of egg-salad sandwiches, but are looking for a twist to this classic sandwich, try skipping the egg and adding tofu. You still get all the protein that you would from an egg salad, but with a much lighter flavor. Topped with fresh sprouts and sandwiched on whole-wheat bread, this sandwich makes a healthy lunch option.

If you'd like to make this tofu salad sandwich vegan-friendly, simply swap out the mayonnaise in the recipe for vegenaise. And if you'd like to maintain the color of traditional egg salad, add a dash of turmeric for a yellow tint.
