How To Stuff A Squash With Just About Anything -- Including Mac & Cheese

Squash are just edible bowls waiting to be filled.

Some time ago in a faraway place, a wizard, perhaps, thought to stuff a pumpkin with macaroni and cheese.

For this we are very grateful. The idea is masterful, and the recipe is everything one could hope for in a savory, seasonal dish. Nearly all squash, in fact, lend themselves to being baked into edible bowls. Being a bowl is the perfect job for a squash: Squash bowls simultaneously enrich meals and cut down on clean up. We'd like to stuff all of our favorite foods into an array of squash, but for now we'll share seven glorious ways to do it:

1
Roasted Garlic Spaghetti Squash Lasagna
Half Baked Harvest
All right, people. This is lasagna inside of a squash. It is beautiful. It is gluten-free. It is cheesy, saucy, garlicky and everything you could want out of a lasagna. Reminder: It is lasagna inside of a squash. Holy. Cow.

Sausage & Farro-Stuffed Acorn Squash
Girl In The Little Red Kitchen
This hearty recipe reeks of fall. Spicy Italian sausage, garlic, thyme, farro and Parmesan cheese really make this squash bowl a winner. It takes less than an hour to whip up and bake.

3
Pimento Cheese-Stuffed Summer Squash
You can bake boatloads (heh) of these at once, using both summer squash and zucchini. The recipe is really simple and calls for a topping of breadcrumbs, so it's guaranteed to taste fantastic.

5
Vegan-Stuffed Butternut Squash With Mushroom & Couscous
Zizi Adventures
This thing is ripe in the beauty department. Herbivores can enjoy the dish as is -- the mushrooms add a substantial texture. Those in search of a little more might add sausage or shredded chicken to meat-it-up a bit.

6
Quinoa-Stuffed Kabocha Squash
A House In The Hills
Kabocha, the Japanese pumpkin, tends to be denser and sweeter than other squashes. And -- hey -- it's really stunning, too. This recipe boasts a lot of texture: Crunch from the pomegranate seeds and walnuts, creaminess from the meat of the squash and a little je ne sais quoi from the quinoa grain.

Mac & Cheese-Stuffed Pumpkin
Cooking On The Side
You may not have the resources to carve any jack-o'-lanterns this year. All of your pumpkins will be reserved for macaroni and cheese stuffing. This recipe calls for Italian pork sausage and Fontina and Gruyère cheeses, but feel to mix it up with your favorite mac & cheese ingredients.
