Lasagna can be a paradox.
It's one of those pasta dishes that's so good, yet kind of work-intensive, that it's usually easier (yet more expensive and less gratifying) to order out.
That's not the case with this method from BuzzFeed Video, a heftier take on the cannelloni: Roll all the goodness of lasagna filling into individual lasagna noodles, and bake for half an hour.
Don't need to feed 12 hungry mouths? Then just cut back on the amounts of the ingredients and make as few rolls as you'd like. It's brilliantly simple.
Here's how to do it:
- Lasagna noodles, 1 package
- 1 egg
- 15-ounce can of ricotta
- 8 ounces of fresh mozzarella
- Shredded parmesan
- Handful of fresh spinach
- 1 cup of marinara sauce
- Salt and pepper to taste
Cook lasagna noodles in boiling water al dente. While they're boiling, whisk the egg in a separate bowl and add ricotta until mixed. Season with salt and pepper to taste.
Slice mozzarella into half-inch thick slices.
When noodles are ready, strain and lay out individually. Spoon in ricotta mixture and flatten with the spoon. Layer with spinach, some of the marinara sauce and parmesan cheese.
Roll up, being careful not to squeeze out the filling.
In a baking dish, spoon more marinara sauce into the bottom of the dish and add the lasagna rolls. Top with more marinara, slices of mozzarella, parmesan and pepper.
Bake at 350º F for 25 to 30 minutes (before serving, feel free to broil the top to brown the cheese for a few minutes).
