Finding recipes to use ugly produce in is not rocket science. Basically, any recipe that you use a regular carrot in, you can use an ugly carrot in. The same goes for potatoes, beets, zucchini... you get the idea. All ugly vegetables can be used in place of the veggies society has deemed acceptable to eat because they taste the same. Despite this fact, half of all U.S. produce grown is rejected and thrown out because it doesn't meet consumers' aesthetic demands ― and so we’re here to help you incorporate cosmetically-challenged produce into your recipes.
If you care about final presentation, but want to support ugly vegetables, then you probably don’t want to roast whole, knobby carrots to serve your dinner guests. Instead, consider grating those carrots to bake into a layered carrot cake. Or boil those ugly potatoes to mash in a loaded potato soup. Basically any recipe that grates, mashes or bakes produce is perfect for the those labeled ugly.
