Radishes get a bad rap. Most people associate radishes with the sad little discs of pink and white that you see on a generic salad, and their sharp taste can often leave diners without much desire to tackle them further.

But are we really seeing the best of the radish? Dirt Candy's Amanda Cohen doesn't think so. We sat down with the chef to talk about how to use this versatile vegetable that comes in varieties like black radishes, easter egg radishes and even the popular horseradish. From spiralizing the vegetable as a noodle to pan-searing a colorful variety, Cohen believes there is so much more to radishes than we are typically used to seeing.
