A Day of Delicious, Nutritious, Healthy Raw Food

As an eco-raw food chef and author, folks often ask me what I eat. I'll show you here what I ate yesterday, and you'll see it's hardly carrot sticks and celery. I think I eat a lot more than most people do, and I'm super active. I live in Los Angeles, CA, and this is my food diary from August 25th. It's easy to eat healthy everyday.

Antioxidant Superfood Smoothie

Made with Navitas Natural's Tropical Blend (packed with antioxidants from blueberry, acai, mangosteen), sprouted flax seed powder, coconut oil, maca, chia seed, and strawberries.

Kelp Noodles in Pistachio Pesto

Kelp is a sea vegetable rich in minerals. It's high in iodine to work with our thyroid to balance our metabolism.

My pesto is made with pistachio for protein, avocado for good fat and creamy goodness, and lemon juice for vitamin C and antioxidants. Great for our skin and hair.


4pm: Afternoon Snack

1/2 cup dried Mulberries and Golden Berries

These berries are both packed with antioxidants, vitamins A, C, B, and are a great source of protein. A healthy low sugar sweet snack.

Sunflower Cheeze Stuffed Anaheim Chilies with Chocolate Mole Sauce

I call my dairy free cheeses 'cheeze', with the Z. This rich cheeze is made by processing sunflower seeds and lemon juice with a hint of garlic and sea salt. My Mole Sauce is made by blending tomatoes with raw chocolate powder.

Peach Cobbler

My cobbler crust is made with protein packed pecans and is whole fruit sweetened with dates. No flour, butter, eggs here! Just fresh organic whole food goodness all fresh from the local farmer's market here in SoCal.

all i know is that i had allergies and bad skin. by eating more fresh whole raw organic fruits and veggies, my skin cleared up, i lost a few pounds, and my allergies are now gone. i agree with raw fooders that illness is caused by toxic buildup in our bodies from what we put in...our food! remember processed food is a business. all about the bottom line. i like knowing what i'm eating and how it's contributing to my health and well being. my 2 cents.

Jeffrey Steingarten explains in "Salad the Silent Killer" in his book "The Man Who Ate Everything" why raw vegetables (not fruits) actually contain defensive chemicals that poison and block nutrients.

You really are better off cooking vegetables, especially leaves, to render these defenses harmless.

Dearest Candyperfumegirl -- I love your name! I am not giving any medical advice, nor am I advocating for a drastic change in anyone's diet. But what I am suggesting is adding more raw foods into the diet can have many surprising effects.

I do not think a purely raw diet makes sense for most people, but I think incorporating more raw foods into our daily diets can help prevent the onset of disease. I would like to keep us all from reaching the point in our health care when western medicine says it has nothing left to offer us to make us better. It is at this point (receiving the diagnosis of metastatic disease) that many people choose to go "all raw all the time." With a strict raw diet (and macrobiotic diets as well), many people have cured themselves of incurable diseases like metastatic cancer, diabetes, rheumatoid arthritis... the list goes on.

So, here's to our health and enjoying all the fresh foods that we have comfortable, easy access to! Ani Pyo's foods and recipes are quick, delicious and easily accessible, and V. Boutenko has marvelous green smoothie ideas -- both are great, delicious ways to incoroporate fresh foods into our daily diets. As always, the best way to decide what is best for your body is to try things out for yourself.

Thanks for the lovely article. I am all for healthy, unprocessed foods, good for you and the planet. I've heard a bit about raw food, but I think it overlooks some good options such as soups, whole grains, legumes, and yes: meat (vitamin B12 guys...). It also concerns me that it is such an impractical way of eating for many people, given the price of fresh produce. It is also difficult for some with food intolerances or allergies, since much of it involves nuts, and all of it is raw! I understand that you are spreading good advice to help people, and agree with the principles of whole foods, raised and transported in the most ecologically sound way. I just think it is important to recognize that a diet incorporating cooked foods can include more people.

Well, as a former physician, I'd just like to say the science behind raw food is not solid... yet. But something happens when we increase the amount of raw foods in our diet: our skin tones change - to rosy cheeks and red lips without lipstick(!); energy levels increase; our need for sleep decreases.

It is not entirely clear why this is, but I like Mrs. Boutenko's (raw food author) theory about protein digestion. Proteins are broken down in the body to be used as their smaller pieces -- amino acids. Raw foods contain free amino acids so your body does not have do the work of breaking down the proteins. Also, most pigmented foods (dark fruits and vegetables) are very high in anti-oxidants, which may be damaged in cooking, and anti-oxidants help keep us young and healthy in many ways. Heat also is a different sort of transformer than is acid from the stomach, especially high heat. Mrs. Boutenko (in 12 Steps to Raw Foods) mentions the formation of AGE's (advanced glycoxidation end products) in cooked foods, which tend to cause general degeneration of organ and vascular tissues. The list of theories goes on and on...

Why not decide for yourself? Why not do your own experiment? Try eating raw foods or add green smoothies to your current diet (per Victoria Boutenko's book Green for Life) religiously for a few months - you and others will comment on the change in your appearance and energy levels...

there goes your argument number 2.

1. not NO nutrients. the nutrients are damaged.
