Ingredients

cake batter

-1 tart (green) apple, 1 sweet (red) apple: peeled, cored & chopped apples

-1 stick unsalted butter plus more

-1 1/2 cups dark brown sugar

-2 large eggs

-2 cups all purpose flour

-1 tsp baking soda

-1 tsp ground cinnamon

-1/2 tsp salt

-1 cup sour cream

-1 tsp pure Vanilla extract

crumble topping

-1/2 cup packed dark brown sugar

-1/2 cup all purpose flour

-1/2 tsp ground cinnamon

-4 Tbsp unsalted butter, softened


Procedure

For the cake:

-Preheat oven to 375 degrees

-peel and core apples. Chop them into chunks and set aside.

-cream together 1 stick of butter and brown sugar until creamy. (use a standing mixer if you have one. Use your hands if you don't). Add the eggs one at a time, beating after you add each one.

-In a separate bowl, combine flour, baking soda, cinnamon and salt. Add the dry ingredients to the wet ingredients and mix. Add sour cream and vanilla and mix on medium. After everything is mixed, turn off mixer and use a spatula to fold in the apples.

-Butter a 13x9 pyrex and pour in the cake batter. Set aside.

For the crumble:

-Clean mixing bowl and so you can reuse it.

-Melt the butter on the stove or in the microwave. Combine brown sugar, flour, cinnamon and butter in the mixing bowl and mix (using standing mixer) until it becomes crumbles. Sprinkle it on top of the cake batter.

-Bake for 35 - 40 minutes. Remove and cool for 10 minutes then EAT, EAT, EAT!
