Welcome to the first Economy Bites episode to hit HuffPost! This week we're making Pesto Bows with Spinach and Sausage. Aren't you salivating just reading that title?

This is an easy and tasty dish that exemplifies the ideology of Economy Bites: cooking should be affordable and accessible to anyone with $25 and a couple of hours. Like all our meals, our pesto bows with spinach and sausage will last up to 5 days in the refrigerator, taking the hassle out of cooking dinner after a long day at work. All our ingredients come from our local supermarket here in Sunset Park, Brooklyn, but if you'd prefer to step it up a notch, you could easily do your shopping at the Park Slope Food Co-op or farmer's market. So, without further ado:
