This episode stars me and a meatloaf. Not so fast, don't turn away. For most of us, meatloaf conjures up sloppy images -- ground beef, ketchup and frowns. But my meatloaf is different, no ground beef, no ketchup. My meatloaf is Tex-Mex inspired and really, really tasty. It's made with fresh Southwestern ingredients that I love. This is not your mama's meatloaf, unless I am your mama...and I'm not.
Not much else to say about this meatloaf. It's very good. It may not be glamorous, but it's easy to make and it's cheap to assemble and it will fill your tummy with peaceful feelings. Is that not what we want from a home cooked meal? I'd chose tasty over fancy any day.
Last note: Our promotion with The Brooklyn Kitchen is still available. Be sure to check out their online store, and use the code EBITES2010 for 10% off your purchase. What are you waiting for!!!!???? If you want to buy something for me, that would be OK too.
