Recipe: Chicken Chorizo Meatloaf (VIDEO)

This episode stars me and a meatloaf. Not so fast, don't turn away. For most of us, meatloaf conjures up sloppy images -- ground beef, ketchup and frowns. But my meatloaf is different, no ground beef, no ketchup. My meatloaf is Tex-Mex inspired and really, really tasty. It's made with fresh Southwestern ingredients that I love. This is not your mama's meatloaf, unless I am your mama...and I'm not.

Not much else to say about this meatloaf. It's very good. It may not be glamorous, but it's easy to make and it's cheap to assemble and it will fill your tummy with peaceful feelings. Is that not what we want from a home cooked meal? I'd chose tasty over fancy any day.

I made this recipe last weekend. It made just so-so meatloaf. However, it made fantastic filling for enchiladas. After some experimentation, I substituted brown rice for the bread crumbs (healthier, and more texture), and used a large can of "medium" enchilada sauce to soften the corn tacos and to marinate the filling.

Chorizo is too fatty for me. Try a spices to spice uo your chicken or turkey meatloaf e.g., cinnamon, ground coriander seed, crushed garlic, cumin, salt an a bt of cayenne. With a chicken meatloadf you could also try lemon just or zest, minced onion and green pepper, fennel, pepper and garlic.

True, but for some recipes (like chili), a little fat of some sort (even from vegetable oil) is necessary. I never use more than 1/4 chorizo to 3/4 very lean meat (like ground turkey). (As an aside, a really superb ingredient for things like meatloaf and stuffed peppers is Texturized Vegetable Protein, which you can buy in small, but expensive, quantities from Bob's Red Mill in most grocery stores or in bulk at health food stores. You'll need to add a fair amount of extra virgin olive oil to get the texture right as a meatloaf/meat filling substitute (I do it to taste & texture, so I don't have a precise measurement - but it might be as much as 6 Tbsp per pound). EV Olive Oil is quite good for you, though.

I've actually been using this recipe for years, but I add a spicy mustard crust near the end for some added texture.

I will say though this is a great recipe.

I don't know much about cooking and food...but I know what I hate. And...I don't hate this.

This looks extremely tasty! I know what I'm going to be trying in the kitchen this weekend.
