Deviled Eggs Gone Wild

Remember when deviled eggs were simple, mayo-soaked apps your aunt used to make for family picnics? Not anymore. Inventive restaurant chefs and food bloggers around the country have taken good old deviled eggs to a whole new level. Here are our top 10 favorite new-school deviled eggs.

There's no rule that deviled eggs have to be hard boiled. Wait, is there? Regardless, chef Thomas Dunklin of B&O American Brasserie in Baltimore doesn't abide by it, soft boiling his eggs and deviling them Maryland style, with crab. We have never served mayo laden anything.

Curry, Tabasco, creole mustard, chives, cumin, and caviar topping have been staples in our devlied eggs for generations.

I just made the avocado ones and they are chilling in the fridge for later. I took a taste test and OMG DELISH !!!!!!

I actually have avocados for my salad ( LOVE AVOCADO) and everything to make the classic deviled eggs. I'm really contemplating trying it. Maybe I'll make both types just in case. ;p

Waouh, I love this post. I recently ordered them in a French brasserie in Montreal as I felt a bit nostalgic. They were delicious and comforting. But I really am inspired by your pictures and the creativity around such a simple idea.

My favorite is pesto deviled eggs.

Mix the yolk and mayo with some generous scoops of pesto, blend and pipe back in. A very light dusting of paprika and there you go.

At Halloween, I cut stuffed green spanish olives in half and poke them in to make "eyeballs".

I make my own pesto but you can use store bought. Just be aware most store bought has canola oil. I only use olive oil and fresh basil in mine. I also use piñon nuts and some store bought doesn't. Home made is always best. Oh, and you can freeze it.

Oh man!  I've got to try the deep fried, avocado, lobster and crab deviled eggs.  Sounds delicious.

Mix the yolks with some Marie's Bleu Cheese salad dressing, or whatever brand is your favorite. Simple and quite decadent.

Oh no, keep eggs simple. Mash the yokes with a little mayo, salt, pepper and dry mustard, Top with paprika. Enjoy well chilled.

eggs, mayo (or fat free sour cream), mustard and paprika added to potatoes with scallions make the best deviled potato salad. I got married so long ago (31 years) that one of my gifts was a plate with 24 little egg shapes for holding deviled eggs.. it's been well used - my boys grew up asking for them on Sat. afternoons.

I think the deviled eggs with smoked salmon look divine and I've got all the fixins in the fridge
