Is Eating Fat Chickens Making Us Fat?

Can eating today's overweight and often deformed industrial chickens be contributing to our obesity epidemic? Is it possible that the white lean meat we've been told is better for us than heart attack-inducing red meat is actually full of fat? According to a 2009 British study -- yes.

The study, published in Public Health Nutrition and spearheaded by Dr. Yiqun Wang, shows that chickens have become obese at an alarming rate and, consequently, their nutritional value has plummeted. The explanations are many, but they can be summarized as a change in feed from grass to grain, a lack of movement due to confinement and gene selection for rapid weight gain starting in the 1970s.

Now, heritage poultry breeder Frank Reese Jr., consulting/advocacy group Farm Forward and Kansas State University have decided to conduct a similar study in the United States. But unlike the Wang study, which only focused on hybrid boilers, the KSU study will compare the nutritional value of Reese's heritage breed chickens (standard bred barred rocks) to that of store-bought chickens (hybrid boilers).

With heritage breeds, the focus is on genetics, which Reese feels is an element of poultry that is often overlooked by the media and consumers. "They may call them free range or organic but it is all the same animal. Organic makes no difference nutritionally. It's the same hybridized hen that is laying the egg," says Reese. To receive a heritage breed label, a chicken "must be from parent and grandparent stock of breeds recognized by the American Poultry Association (APA) prior to the mid-20th century." The chickens must also have genetic lines that can be traced back for multiple generations and they must mate naturally. Whereas Reese's chickens take 140 days to grow to fryer weight (3 to 3.5 pounds), industrial chickens take approximately 40 days. The rate for free-range chickens who are not aggressively overfed is marginally better, clocking in at around 60 days.

Reese and Farm Forward propose that heritage birds will prove nutritionally superior and uphold chicken's "lean" reputation. If they're succesful, their findings will be unwelcome news to the chicken industry -- both industrial and otherwsie. "It's common sense really," explains Steve Gross, Chairman of Farm Forward. "An animal that is healthy will be more nutritious and should taste better. But you can't just say that, you have to prove it."

Farm Forward and Reese have engaged Dr. Elizabeth Boyle, animal science professor at Kansas State University, to conduct the research for the study, which will be titled, "Comparison of protein and fat content between the meat from Standard Bred Barred Rocks and Hybrid Broilers." The heritage breed birds she will use in the study will all come from Reese's Good Shephard Poultry Ranch, where they have been raising the same breed of birds for over 50 years. Research began in February and the team expects that it will last for six to eight months.

Farm Forward and Reese don't anticipate that the results of this study will go over quietly, and they are already making plans for follow-up studies on heritage breeds of other animals like turkeys. Farm Forward's Gross says he is prepared to have the industry challenge whatever conclusions come out in the study. "We may not have their dollars, but we probably have more stamina," says Gross.

Regardless of how big agriculture might respond, Reese is confident that the modern chickens will prove nutritionally inferior to his heritage breed birds. "You'd be better off eating a hamburger than a hybrid chicken," says Reese.

Woohoo eating a chicken that grows in 40 days rather than 140 days sounds wonderful doesn't it? God, what has America come to, genetically modifying chickens by inserting growth hormones to cause an increase in cell division. (this is not breeding either they actually pump the animals with the growth hormones usually with needles or by growing the chickens in a lab...) So hmmmmm increase cell division in animals = increased cell division in people....I wonder why America has the highest population infested with cancer.

These chickens, and other animals like cows and pigs...and now farm raised fish..., are getting fed genetically modified corn which they don't eat in the first place. If people knew the processes that these animals were raised, like the "magnificent" 40 day life span, they would then know that these animals are harvested around a certain time because most of the genetically modified animals obtain cancerous growths/die after their growth spurt of 40 days. American people are eating sick animals all for the benefit of major fertilizer/seed companies like Monsanto who over took the biotech industry in the course of 30 years. And is the FDA here to save anyone....no....highly positioned employees of Monsanto now are the head committees of the FDA and the EPA. .America is sliding down a long slippery slope...

As more chicken has been added to our diet obesity has gone up. This would be important if the increase in chicken didn't happen at the same time we started massively increasing the amount of corn sugar in the American diet.

As an aside I've never known a time when chickens ate grass as their primary food. Grandmother's "free-range" chickens were regularly given chicken feed.

"ERS’s loss-adjusted annual per capita food supply series (adjusted for spoilage, cooking losses,
plate waste, and other food losses accumulated throughout the marketing system and the home) suggests that average daily calorie consumption in 2000 was 12 percent, or roughly 300 calories, above the 1985 level. Of that 300-calorie increase, grains (mainly refined grains) accounted for 46 percent; added fats, 24 percent; added sugars, 23 percent; fruits and vegetables, 8 percent; and the meat and dairy groups together declined by 1 percent."

Most of those added fats come from vegetable oils, also known as seed oils.

Rule of thumb: If the animal you eat is sick, you will be sick too. A couple of days ago, I read an article in the NY Times that when they test the feathers of chickens they found that the chicken ranchers fed their chickens arsenic, benedryl, among other unwholesome things:

I eat a lot less chicken and turkey since I started buying my meat from farms direct. I invite everyone to take responsibility through your dollar and buy healthily raised sustainable locally raised food. It will contribute to your health and well being. Remember: if your (great) grandmother wouldn't recognize the food, don't eat it.

The study examined the total amount of fat, on the ENTIRE CARCASS. Do you know anyone who eats the entire carcass, or picks off the fat deposits are eats them? I certainly don't. This study appears to be designed and conducted without any significant consideration for how people actually EAT the chicken.

This study doesn't make sense. If someone is worried about the fat from a chicken, they will cook it and not eat the fat (or skin) that would be rendered during the roasting/rotisserie process. Or they will grill it and the fat will drip out of the chicken as it cooks. The only way eating "fatter" chickens will make you "fatter" is 1) you eat the fat or 2) because there is more meat available, one eats more meat than a single serving, but that's not the chicken's fault. No matter the type of chicken, in gram for gram equivalent, a grilled skinless chicken breast (meat only) cannot be more full of fat and calories than ground beef.
