Kazunori Nozawa: "Sushi Nazi"

Along the four-mile stretch on Ventura Blvd in Studio City commonly referred to as "the Sushi strip," connoisseurs of raw fish are confronted with many choices to satisfy their raw fish cravings, but the only man you can turn to satiate them is Kazunori Nozawa. Nozawa is a master sushi chef who rules his restaurant, "Sushi Nozawa" with an iron fist and a very sharp blade. For decades he's been introducing Americans to the Omakase (chef's choice) menu, and if ever questioned to what's on it, only offers you his long-standing motto of "Trust Me."

When you sit at the sushi bar, you put your sushi destiny in Chef Nozawa's hands. He chooses his top sushi picks of the day, which varies depending on season and availability, and absolutely refuses to serves abominations such as California or spicy tuna rolls, so don't even ask.

Affectionately referred to by fans as the "Sushi Nazi", in reference to the famed "Soup Nazi" of the Seinfeld television series, Nozawa is known for throwing out even the most highbrow of customers who don't play by the rules. But those who do can boast at having one of the most authentic and delicious sushi experiences in the U.S.

Beyond his reputation for good sushi and penchant for ejecting customers, there's more to Nozawa than meets the eye. For that reason, my friend, sometimes collaborator, and fellow sushi lover David Gelb and I decided to get to know the man behind the counter. This is what we discovered...

It's awesome when a chef is that passionate about his food.

I feel like things are finally starting to come around here in Milwaukee with regards to sushi. Which is a good thing, because it has been pretty bad for a long time.

Omakase is the only way to go in a high end Sushi restuarant...although I did go the omakase way at the Nobu in Trinbeca and that tab ran over $500.00 for two people.

Exactly..I think the only thing that bothers me is the inevitable pricey tab that comes at the end. Its as if the amazing quality and deliciousness is meant to distract you from whats about to hit your wallet.

I've been there several times and his sushi is very good. He needs to understand that there are many Americans who understand real sushi and know what omakase means. The "Americans don't know" thing is part of his repertoire and to be honest it can get a little old.

He's good but not necessarily the best. Keizo Seki, the chef and owner of Sushi Zo also serves omakase only. Seki just recently received a one star from the Michelin Guide. And for 2011 Zagat lists him as "top food" in LA. I personally prefer Seki's omakase.

Hiroyuki Urasawa's place is also very good, too. Albeit quite expensive.

There are a few top notch sushi places in LA, and Americans know enough about quality to support them.

He is definitely an interesting, passionate, and disciplined man. I love that even though he has over 40 years of experience he thinks it is not enough. He is a person who pushes himself to learn more every day and I find that very admirable.

I love sushi, but I'm not sure about going to a restaurant that kicks out customers, unless the customers are being really outrageously rude or threatening or something.

Excellent! In my perfect universe the detestable invention of California Rolls, Spicy Tuna Rolls and variations thereof! Enjoyed reading this and if I get out to this area, will try to get in!
