Life Reflections And A Delicious Paleo Recipe... Simple Pleasures!

Life is beautiful, guys.

Life truly is beautiful.

As I woke up to the news that Britain has left the EU, I have to admit as one who hardly follows the news (I find it all to be way too depressing and heartbreaking for my liking. I'd rather watch SpongeBob SquarePants, Broad City or even The Real Housewives, to be honest), I have no idea what it now means for my family and I but it momentarily made me think about leaving England, the place of my birth.

I then decided to look up other countries on the internet that I would like to live in and that is when I stumbled upon the wonderful blog Earthy Andy and the sight of her beautiful family, not to talk of delicious recipes, really made my day!

I don't know if it has been the torrential rain that has continuously fallen here in the UK over the past fortnight or the rather busy couple of weeks I have just had, but seeing Andrea and her gorgeous family, surrounded by heavenly views and landscapes brought a tear to my eye and everything into perspective: regardless of what one is going through, life truly is beautiful and whatever one makes of it.

Regardless of where one lives or what one is doing, it is your mindset which depicts everything.

I do not know Andrea or her life story but it is the glow and happiness that seems to permeate from her which gives the impression that she could be living in a dilapidated flat with a hole in the roof and still be happy and content... and there in lies the secret to true happiness and subsequent abundance.

You do not have to be living in paradise... if you do not wish to.

Or you can take a look at the wondrous joys of nature provided for us all around: in our children, the trees, life, SpongeBob SquarePants... and realize that we all live in paradise and are destined for greatness, if we want.

It'a simple fact and formula to life that isn't hard to adhere to really, if you think about it.

So, for now, leaving London is no longer on the cards even if the UK is no longer a part of the EU... whatever that means.

Anyway, enough of my morning ramblings!

Today's recipe is a tasty batch of banana and walnut mini cakes that are ideal as on the go breakfast bites or an afternoon treat.

They are gluten free/paleo and therefore mega healthy as well as delicious which is basically what we all want out of food, right?

They're ready in under thirty minutes and look too cute for words. Give them a go yourself and do let me know what you think or if you added any variations to the recipe and how you found it.

Ingredients

3 ripe bananas
3 eggs
4 tablespoons of coconut oil, melted.
1 tablespoon of vanilla essence
1/2 cup of almond flour
1/2 cup of coconut flour
1/2 cup tapioca flour
1 tablespoon of baking powder
1/2 cup of chopped walnuts
4 tablespoons of honey
1 tablespoon of grated nutmeg

Instructions

Pre-heat the oven to 180 c.
In a bowl mash the bananas then add the eggs, coconut oil and vanilla.
Add the rest of the ingredients and fold in well, ensuring everything is combined.
Evenly distribute the mixture in to cake cases and place in the oven to bake for approximately 20 -25 minutes, or until a knife placed in one of the cakes comes out clean.
