My contribution to our New Year's Eve celebration: The Very Sexy Martini - Grey Goose Citron vodka, muddled raspberies and mint, a little simple syrup, topped with champagne. They were delicious and definitely lived up to their name ... until the early hours of 2011 at which time they became decidedly *unsexy* and I was reminded of a lesson learned in my early twenties: there is only one thing which is an acceptable mixer with champagne - orange juice. And then only on Sunday mornings and never more than two. The Very Sexy Martini of late 2010 has now become The Meanie Martini of 2011. (I still can't understand why I ever thought mixing vodka and champagne in the same glass was a good idea.)

Can anybody out there tell us if the French 75 coctail is good? I am thinking of boiling some sugar syrup for tonight's drinks.

Would Korbel Brut do the trick?

I prefer my black velvets in a pilsner glass. It's still tall and narrow enough to accentuate the bubbly. Adding a sugar lump and a good double splash of bitters to 1/3rd guinness and 2/3rds champagne is the way I learned it.

Gin in a French 75? Does the author know how the drink came about? It was named for the French 75 MM guns of WW1. That means brandy or cognac in champagne, not gin, gin is too English!

Love, love, love just about anything with champagne in it. When the shape of the St. Germain bottle seduced me into buying it (the little one-shot size), after tasting it I realized that it and champagne were made for each other. St. Germain is a delicate elderberry-flavored liquor; quite luscious.

Dom Perignon stands alone. Anyone who adds anything to it should be haunted by the old friar himself. Though, a single perfect unbruised raspberry in the glass makes it beautiful.

There's a good recipe that's simple. Just one scoop of lime sherbet and you pour champagne
over it. I call it The Norma Zimmer cocktail. You could use raspberry or orange or pineapple,
but I like lime the best.

Or substitute Rhine wine or Sauternes with club soda for the champagne - once you mix it with sherbet it really doesn't matter.

The Champagne Cocktail, as I remember it, was a sugar cube soaked with a dash of bitters in the glass and the champagne poured over it. Sometimes the champagne came in a split and you poured it yourself.
