Carrie Vitt is in my kitchen today, talking about her love for cooking--be it the detailed process or the use of clean ingredients.
When faced with health problems that meant popping multiple medications, Carrie took matters into her own hands--or rather, into her own kitchen. She switched her diet to whole, unprocessed, pure organic ingredients and noticed an improvement in a matter of days. Seven years later, Carrie is medication free and shares all her organic recipes on her blog, Deliciously Organic. She is the author of the cookbook Deliciously Organic, to be released December 26, 2010.
Why is organic living important to you?
I suffered for years from debilitating migraines, only to find out that they were caused by the pesticides, additives, and chemicals in my food. When I changed my diet to organic, the migraines disappeared and I was able to go off of my medications. Through that experience, I learned that what I put in my body each day plays a huge role in my health. I now want to share with others how to cook foods that take us back to the recipes and flavors we love, using only unprocessed and organic ingredients.
What was your favorite food growing up?
Chicken Kiev. It was a fashionable dish in the '80s, and my mom and I would work together in the kitchen rolling, pinning, and frying the chicken. It was a lot of work, but so rewarding!
What's your go-to comfort food now?
Pasta. Thick strands of eggy pasta with cream, butter, and a splash of truffle oil. Pure indulgence.
What's the one thing in your kitchen you just can't live without?
My citrus reamer. I cook with lots of lemons and limes, and this little gadget--which costs only $3--can get every last bit of juice out of the fruit.
What magazine, book, and products are you most obsessed with right now?
I love the Donna Hay magazines. The photography and styling is fabulous.
What's the most important news story you think we should all pay more attention to?
The amount of genetically modified fruits and vegetables in our food supply, and the genetically modified foods that could be in our food supply soon.
Where do you get your news?
I have quite a list! A few are: The Environmental Working Group, The Center for Food Safety, Weston A. Price, Natural News, and the Organic Consumers Association.
Here's Carrie's favorite winter drink recipe:
Peppermint Mocha
Makes 1 8-ounce serving
Ingredients:
1½ Tablespoons cocoa powder
1½ Tablespoons organic whole cane sugar or sucanat
6 ounces whole milk
2 ounces strong brewed herbal coffee (Carrie uses Teeccino)
A splash of peppermint extract
2 Tablespoons whipped cream
1. Whisk together milk, cocoa powder, and whole cane sugar in a small saucepan over medium heat.
2. When the milk begins to steam, take it off of the heat and pour it into a mug.
3. Add the herbal coffee and splash of peppermint extract. Top with a large dollop of whipped cream.
