Once all the rage at ladies luncheons, a quiche is now as popular as ever. And this light version is simple and sensational! It's a great recipe for using up things you might already have on hand, chicken, spinach and eggs. Serve for brunch, lunch or for dinner. Add a side salad and you're set. Each serving has 227 calories, 5 grams of fat and 5 Weight Watchers SmartPoints.
3 packed cups fresh spinach leaves, chopped or torn
1 teaspoon garlic, minced
2 cups frozen Ore Ida diced hash brown potatoes (not thawed, not shredded), see shopping tips
1 cup cooked chicken breasts, diced
2 eggs, see shopping tips
⅔ cup from a (10¾ oz) can Campbell's Healthy Request cream of chicken soup (condensed)
½ teaspoon Lawry's seasoning salt
½ cup light mozzarella cheese
1 tablespoon Parmesan cheese, grated
1. Preheat oven to 400 degrees. Coat a 9 x 9 inch baking pan with cooking spray.
2. In a medium bowl, add chopped spinach, onions and garlic. Cook for 1 minute, in the microwave, to soften.
3. In a large bowl, mix together frozen hash browns, chicken, cooked spinach and onions. In a medium bowl, whisk together eggs, egg whites, ⅔ cup condensed soup, milk, seasoning salt and black pepper. Pour over potato mixture and toss to mix. Add mixture to baking pan. Be sure to spread the chicken and spinach around casserole. Cover with foil and bake for 30 minutes. Remove foil, sprinkle with both cheeses. Bake uncovered, an additional 20 minutes, until golden brown and cheese is melted.
4. Let it sit for 10 minutes to set. Cut into 6 slices. Using a spatula, carefully remove each slice.
5. This casserole freezes great. I like to wrap into individual servings and store in the freezer. Great for a quick meal any day of the week!

Shopping Tips
Diced frozen hash brown potatoes can be found in the freezer section of most supermarkets. Ore Ida is the most popular brand. They come diced and contain no fat, just potatoes. Diced potatoes work much better for this recipe than shredded ones.
Whenever a recipe calls for using eggs, I love Eggland's Best eggs! They have less saturated fat, less cholesterol, more Vitamin D, more Vitamin E and double the Omega 3 than regular eggs. Most supermarkets see them in the egg aisle.
