Whether you observe Meatless Monday or Vegan Before 6, it's nice to breakup the week by embracing a few plant-based meals. The nice thing about vegetarian cooking is that it's naturally quick-cooking. While most one-pot meat-based dishes take hours to slowly braise in the oven, you can get the same hearty, comforting feeling from a veggie soup or stew in under an hour.
I've put together a few of my favorite weeknight vegetarian dinners that take little more to make than a stock pot and a ladle.
