Must Try: The Zucchini Chocolate Cake

Although we aren't making any health claims for this delicious cake, using wholesome ingredients like whole wheat flour, flax seed and cane sugar can make you feel good about having a slice (or two!) as a tasty treat. Adding zucchini helps keep the cake moist.

Zucchini Chocolate Cake Recipe
  • 1 1/8 cup whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup cane sugar
  • ½ cup butter or coconut oil
  • 1 egg
  • ½ teaspoon vanilla
  • 1 tablespoon ground flaxseed
  • ¼ cup buttermilk or kefir
  • 1 cup grated zucchini (about 1 medium)
  • ½ cup semisweet chocolate chips
  • ½ cup walnut pieces

Preheat oven to 325°F. Butter and flour a 9" round baking pan. Sift flour, cocoa powder, baking soda and salt into medium bowl. Beat sugar, butter and oil in large bowl until well blended. Add egg, ground flax and vanilla extract. Mix in dry ingredients alternately with buttermilk or kefir. Mix in grated zucchini. Pour batter into prepared pan. Sprinkle chocolate chips and nuts over. Bake cake until tester inserted into center comes out clean, 30-40 minutes. Cool cake completely in pan.
