Zuppa di Verdure all'Agliata (Umbrian Vegetable Soup)

Unlike in a classic minestrone, the vegetables in this dish are cooked quickly to preserve their bright flavor. The recipe is based on one in Lidia Cooks from the Heart of Italy by Lidia Bastianich (Knopf, 2009).

I grow my own lamb. I have a small flock of sheep I keep as mowers and to put one in the freezer each fall. There is nothing like a little lamb stock to may a fab soup.

Is there a mistake in the Umbrian Vegetable Soup recipe? I've read it several times and there is no liquid listed. No water? No broth? How is it a soup?

they didnt say vegan.. or vegetarian soup..

zero, then just add your favorite meat and be creative. The first time I make a soup from a recipe it's just that a soup recipe but the second time I make all kind of changes.

TwoGaryGuys, yum, GS apple curry soup indeed along with winter squash soups with an apple added and pumpkin and zucchini breads with heady spices and nuts. My favortite time of the year for cooking. I made an apple crumble yesterday with GGranny's apples adding cardamon and masala spices. It's great for breakfast as well.

One of the Indian soups has lamb shanks in it and most have meat broth which I never use as I'm a vegetarian eating a plant based diet.

Agree. Im going to try that one cuz I love bean soups and spinach/kale in my soup. You dont always need "meat" in your soup. Beans and veggies can be very satisfying.

naschkatze, me too. I like to be creative with my soups as well that's why I bought myself a beautiful blue French Chantal "soup pot" for my 60th birthday and now I'm a super soup cook.

I misread the title and really stuck my foot in.

Fall "Vegetable" soups, not just "Fall Soups." Mea culpa. Though some of those soups are suspiciously light on veggie and are very much based on meat and stock flavors.

2 smoked ham hocks
1 lb. pork ribs
2 bay leaves
1/4 lb. (4 strips) bacon, finely chopped

probably tastes really good. but c'mon. waay too much fat.

render the bacon and degrease it, precook the rest of the meats the day before and skim stock, also discarding the excess fat. That is what I do for soups and beans that use large quantities of smoked or raw pork.

... a vegetable soup is a soup made of: vegetables, meat is not a vegetable- and no, a vegetable soup can NOT have meat in it, otherwise every soup would be a vegetable soup, or have you ever seen a soup without any vegetables in it ?

I assume that since you are a HuffPo blogger and your name is ModeratorStephanie, that you are, in fact, a HuffPo moderator. If so, could you please explain to me why moderators on this site have been posting comments on 'sensitive' articles, in which, they take definitive stances on the issues. It would seem that there would be a clear conflict of interest in moderating articles that you have made posts on. I have had more than one intelligent, well though out, and sourced posts, which contradicted a arguments made by a moderator, censored. There was no foul or inflammatory language, so I have to assume a moderator got upset that someone had the gall to explain, in detail, why their post was illogical.

You would do this site a great service if you could explain to your fellow moderators that they either need to refrain from taking positions on issues or stop making posts on articles that others might disagree with. It comes across as childish and petty when comments are censored because moderators cannot handle a civil argument. The same type of behavior that this very site loves to mock a certain political party for.
