This Ingredient Takes Sweet Potato Fries to the Next Level

That's why we're such a fan of crispy sweet potato fries--simply baked or roasted with a little salt and pepper. But there's one spice that pairs supremely well with sweet potatoes...

Curry powder takes our fries to a whole other level of flavor; its warm, savory-spicy notes pair perfectly with the natural sweetness of the potatoes. And while you're busy feasting, keep in mind that sweet potatoes are brimming with nutrients such as beta carotene, which is important to eye health and fiber. Add a little Greek yogurt dipping sauce, and you have a recipe that's perfect as a side item or as a party platter.

Curry-Spiced Sweet Potato Fries

INGREDIENTS

  • 2 large sweet potatoes, sliced into even-sized fry-shaped pieces
  • 2 teaspoons canola oil
  • 2 teaspoons curry powder
  • ½ teaspoon turmeric
  • ¼ teaspoon garlic powder
  • Pinch of red pepper flakes, optional
  • Salt and pepper, to taste

DIRECTIONS

Pre-heat oven to 425 degrees F. Make sure the sweet potato fries are DRY by patting them down with paper towels several times. This is very important if you want crispy fries. Line a baking sheet with parchment paper. Toss sweet potatoes in oil, curry powder, turmeric, garlic powder, red pepper flakes (if using), and salt and pepper, to taste. Place fries in a single layer on the prepared baking sheet and bake until crisp and browned slightly, 25-35 minutes. Serve hot with Orange-Cumin Yogurt Sauce, if desired. Makes 4 servings.

Orange-Cumin Yogurt Sauce

INGREDIENTS

  • ½ cup plain 2% Greek yogurt
  • ½ teaspoon ground cumin
  • 1 tablespoon fresh orange juice
  • ½ teaspoon orange zest
  • Salt and pepper, to taste

DIRECTIONS

Whisk all ingredients together in a small bowl until well combined. Serve with the Curry-Spiced Sweet Potato Fries. Makes 4 servings.
