It's the Quran, sunna, interpretations by qadis, fatwas, and consists of different madhabs (schools of thought.) But by all means, show me the quote where it says to cut off the head of someone whom you get into an argument with.
The fact that this guy went crazy and used God's name in order to do so is a travesty, but it's not the religion's fault. It's the man's.
