“Authentic original car tires were bicycle wheels. Yes, balsamic is not used much in Capri and southern Italy, but they use it in Modena, Parma, and elsewhere. I like balsamic so much I put it on fruit and even ice cream, and I have never been arrested for using it on tomatoes. Try it. You might like it.”

“Sorry to have to comment here on your pickled green tomatoes, but the comments were closed there. I did note that you stated that the other pickles get mushy after a while. Didn't your mama ever joke around with you when she was canning and let you sample the alum? I did. Man that stuff is so bitter, it chokes you, but it makes your pickle hard. A good pickle canner has no problems with their pickles going soft.  On a related note, I had trouble with my dog wanting to lick his stitches, and I noted that the good antiperspirants(not deodorants) have about 15-20% of a zirconium aluminate in them , and it is quite bitter also. If you want to keep your dog from licking himself, put some "antiperspirant" on the area.One lick and he's done. After that , just the smell will remind him that's a NO!”

“If you read the article you will see that I say that mozz is traditional but I like it with Parm or both. I also specify sea salt (BTW, all salt is sea salt if you want to be picky). I like it with Balsamic. You can leave it out if you want.”

I had always thought the recipe was Italian in origin (although I had something similar in Burgundy, and in Barcelona, just using the local vinegars). I know Balsamico is made only in Modena, IT (the real stuff), so I just assumed the combo was invented there.”

I remember when butter was a killer, now margarine is. When animal fats were deadly, now they are necessary. Lookit: What is and isn't healthy is a moving target and we just don't have it nailed down yet. Briquettes are fine, worth it for the ease of use, and the results are just fine, especially for simple grilling. But for serious BBQ, hardwood is the way to go. Great thing are worth a bit more work.”
