I can't say enough about the miraculous nature of nonstarchy vegetables. They contain micronutrients that work with macronutrients to rebuild and repair your body on a cellular level. The problem is cooking and then all the chewing involved in eating the ideal 12 servings a day.
I find this type of soup a welcome respite, a warm and soothing combination of vegetables and thickened broth packed with powerful nutrients, without a ton of fat calories.
The weather is getting warmer, and soon soup (or at least hot soup) season will be behind us for the foreseeable months. But I'm ready to let go just yet.
