Cheesy Garlic Chip Dip Recipe Will Make You Flip

This cheesy roasted garlic dip is the perfect indulgence. It's a ridiculously delicious mix of cheese, garlic and wonderful creaminess. With some salty potato chips to dip in it, I can't think of any better way to welcome 2013.

I'm firmly of the belief that when it comes to healthy eating resolutions, you should start on January 2, not the very first day of the year. New Year's Day is a holiday after all, and there are just too many opportunities to indulge. So I say don't resist, indulge for just one more day, and this cheesy roasted garlic dip is the perfect indulgence.

From Simply Scratch, it's a ridiculously delicious mix of cheese, garlic and wonderful creaminess. With some salty potato chips to dip in it, I can't think of any better way to welcome 2013. It's also a great recipe to keep on hand for football games and any other occasions when you need a snack that will blow your guests away.

Cheesy Roasted Garlic Chip Dip

1 head of garlic
1 teaspoon olive oil
Salt & pepper
1 cup freshly grated Jarlsberg cheese
1/2 cup mayo
1/4 cup Greek yogurt or sour cream
4 oz. cream cheese
1 large Shallot, diced small
1/4 cup green onions, roughly chopped
Kettle potato chips, for dipping

Preheat your oven to 400 degrees.

Lob off the top third of a head of garlic and place it in a small oven-safe dish. Season with salt, pepper and a drizzle of olive oil, cover the dish with foil and roast for 40-45 minutes.

Let the head of garlic cool before removing all of the roasted garlic cloves and smashing them with a fork.

In a large bowl combine mayo, Greek yogurt and cream cheese until silky smooth. Add in the cup of grated Jarlsberg, sliced green onions, finely diced shallots, smashed garlic, salt and pepper. Stir to combine.

This dip can be devoured right away or let chill in the fridge until ready to serve.

Serve alongside extra crispy kettle chips.
