A new one this year....and it's goooood.
Ingredients:1 1/4 cup all purpose flour1 cup whole wheat flour3/4 cup sugar3/4 cup brown sugar, firmly packed1 tablespoon cinnamon2 teaspoons baking powder1 teaspoon salt1 teaspoon ground nutmeg1/2 teaspoon baking soda1/4 teaspoon curry powder1/2 cup water3/4 cup vegetable oil3 eggs, slightly beaten2 teaspoons vanilla2 large tart cooking apples cut in 1/2 inch cubes3/4 cup walnuts or pecans, finely chopped
Sauce: 1 cup brown sugar, firmly packed1/2 cup whipping cream3 tablespoons butter1 teaspoon vanilla
Directions:Preheat Oven: 350. In large mixer bowl, combine flour, whole-wheat flour, sugar, 3/4 cup brown sugar, cinnamon, baking powder, salt, nutmeg, baking soda and curry powder. Whisk together well. Add water, oil, eggs and 2 teaspoons vanilla. Beat at medium speed, scraping bowl often, 1 to 2 minutes or till well mixed. Stir in apples and nuts by hand. Spread into greased and floured 13 X 9 baking pan. Bake for 40-45 min, or until top springs back when touched lightly in center. Cool completely.
Sauce: In small saucepan, combine 1 cup brown sugar, whipping cream and butter. Cook over medium heat, stirring constantly, until sugar is dissolved (3-4 min) Stir in vanilla. Drizzle sauce over each piece of cake just before serving. dollop with whipped cream if desired.
Makes 15 servings.
