Denver's Best Vegetarian Sandwiches

Denver's filled with terrific veggie burger options, and when it comes to meat-free sandwiches -- well, we're no slouch there, either. Here are our favorite veggie sandwiches around town.

Cook's Fresh Market: You may be familiar with the gourmet grocery selection here, but Cook's also offers an array of gourmet lunches including their Vegetarian Panini, created with artichokes, tomatoes, zucchini, grilled onions, basil, mozzarella, arugula and pesto aioli, served on fresh seven grain bread.

Watercourse: This vegetarian eatery offers more than a few delectable options, but we've narrowed our favorites down to The Champ (fresh foccacia bread, roasted beets, grilled zucchini, sprouts, red onions, Swiss cheese and and lemon caper aioli) and The Grinder (Shaved seitan, swiss cheese, mushrooms, onions, and peppers stuffed into a baguette with avacado and served with au jus).

Paris on the Platte: Stop by this long-time Riverfront coffee house and cafe and treat yourself to The Old Country: eggplant, roasted red peppers, mozzarella, provolone, juicy tomatoes, pesto oil, balsamic vinaigrette and black olive spread, served hot on baguette, marbled rye, flour tortilla or whole wheat.

Euclid Hall Bar and Kitchen: For something on the light and fruity side, try the Griddled Camembert and Peach Preserve sandwich at Euclid Hall. Located off Larimer, this hot spot is located in the high-ceiling space where Martini Ranch was once housed.

Masterpiece Delicatessen: When Mom said eat your veggies, she would've been much more convincing had this been on the table. Masterpiece's Roasted Vegetable is laden with zucchini, caramelized onions, wild mushrooms, piquillo peppers, spinach, tomato
tapenade, hummus and Manchego cheese on a crusty baguette.

HBurger: It may seem odd going to a burger joint for a veggie sandwich, but meaty as this one is, it fits right in. Try HBurger's full-flavored Basil Grilled Portobello Sandwich, smothered in pesto, Fontina cheese, onion, Bibb lettuce and tomato.
