Pan-Seared Salmon With Cauliflower And Pine Nuts

In his series Marcus' Kitchen, chef Marcus Samuelsson shares dozens of recipes that prove "American" cuisine is really a delicious melting pot that draws upon flavors from all over the world.

In this video, Marcus livens up a piece of salmon by pan-searing it (seasoned with just a bit of salt and pepper), and topping the fish with a roasted cauliflower and pine nut mixture. Marcus starts by breaking apart the cauliflower florets (he uses colorful varietals, but says regular white cauliflower will do just fine), and roasts them in a pan with garlic, pine nuts, olives, orange peel, soy sauce, lemon juice, cilantro and parsley. The orange and soy flavors -- a sweet and salty combo -- reflect the recipe's Asian influences, while the olives, pine nuts and thyme in this dish represent Marcus' love for Mediterranean flavors.
