Mario Batali stopped by "Late Night with Jimmy Fallon" last night to make shrimp in acqua pazza ("crazy water" in Italian) with Jimmy and Mark Ruffalo. Batali is a TV pro -- he easily moves from cooking instructions to talking about his new branch of Lupa in Hong Kong to discussing his involvement in the Food Stamp Challenge to mentioning that Babbo is now open for lunch (something that excited the folks at Eater New York so much that they live blogged the first lunch service). How convenient that the dish he demonstrates is available during Babbo's lunch!

While cooking, Batali instructs Fallon to add a drop of mayonnaise to the pan. "I do not enjoy mayonnaise, it reminds me of pus," says Fallon.

In the clip, Fallon calls Batali "one of the best people on Twitter" since he answers people's recipes questions, even if they are a bit silly, like wondering what protein they should put on their spinach salad (bacon, duh!).
