Ever wonder what the trick is to making a perfectly even cooked turkey? Sandra Lee, the Editor-in-Chief of Sandra Lee Magazine, stopped by to tell us how it should be done on Mondays with Marlo.
Sandra says the size of the turkey is key . A 20-pound turkey may work for some, but since a very large turkey will take a long time cook, it's almost impossible for it not to come out dry.
Sandra recommends using multiple small turkeys and using one as a centerpiece or just for presentation. As another rule of thumb, rotate the turkey in the oven, although keep in mind that every time you open over door, heat is released. Sandra also puts butter underneath skin and on top of skin, she tents the turkey, opts not to baste it and then finally takes the tent off 20 minutes before the turkey is done cooking through.
