In an age of global shipping, easy refrigeration and chemical preservatives so effective they can make Twinkies last indefinitely, it’s easy to see why local cuisine is becoming marginalized, an antiquated notion. We want what we want when we want it, weather and geography be damned, and so you can get Chinese food in the American Midwest, or enjoy exotic fruits all year long, even if you live in an arctic climate. But every once in a while, a city manages to beat these odds and produce one food or type of food better than other places. Maybe it’s an original invention, or a twist on a new idea, or even a franchise synonymous with quality and forever associated with the city of its birth.
