Writer/Tutor
While it won't make you rich, there are sites out there that can give you a quick turnaround on payment for basic writing assignments. Content mills provide a steady stream of writing work and can be a great starting point if you want to become a freelancer. If you're more of a speaker than a typer, look up "user testing" on Google. These sites will literally pay you to voice your opinions about websites. You can also give Mechanical Turk on Amazon a shot. While the Mturk system is mostly surveys and one-off tasks, it will provide payouts within 72 hours - perfect if you're rushing to scrap together your rent at the last minute!
If you've got a teachable skill, like anything in the STEM field or music, you may be able to make some good cash tutoring others. If you're a night owl or early riser before class, look into teaching English online (subreddits like /r/beermoney often have reviews and recommendations on which sites pay the best).

Not only can this provide a viable income while you're studying, it will leave you with a back-up profession for the future.
Task Runner
Got some spare wheels and time? You might be a great fit for the growing industry of task runners. Sites like TaskRabbit allow you to set a price for your time and help out others that need errands run on their behalf, such as dry cleaning, posting letters, shopping, etc.
The best way to make sure you're able to provide for yourself while attending school is to keep your options open and try to earn an income from a number of different sources. I have a friend whose self-employed, but still brings in extra cash with Airbnb, Lyft, and dog sitting. While that might sound exhausting, it helps give him the freedom to live the way he wants, and keep a nest egg for emergencies.
