When we think of hot beverages there isn't much more in the repertoire than coffee, tea and an occassional hot chocolate or cider. But what if there was a savory alternative?

The advocates for bone broth believe there's an option right in front of us. Bone broth - or as many still view it, stock - has gained in popularity in recent years as a drink in its own right. And the leading voice in the bone broth movement is Marco Canora, owner of Brodo and the newly revamped Hearth in the East Village.

We sat down with the chef to talk about his new book Brodo: A Bone Broth cookbook. Along the way we learned what makes bone broth special, how you can liven it up and what tricks you can use to make sure it turns out perfectly.
