There are only two things I like about sports: 1) dramatic moments of triumph accompanied by the entire stadium erupting in cheers and 2) the food (but not at the same time--that would be a choking hazard!). There's not much I can do about the first one, so I like to focus on the food and feasting.Easy Guacamole! The following recipe serves 1 to 2 people. Scale as necessary. Use organic ingredients if possible. And hey, if you can't find one of the ingredients (other than the avocado), don't worry; the recipe will still taste great!
- 1 avocado
- 4 cherry tomatoes, cut into quarters
- 1 teaspoon minced onion (red or white)
- 1/2 teaspoon chopped jalapeño pepper (for mild to medium)
- 1 small bunch cilantro, finely chopped
- 1 clove garlic, minced
- Juice of 1/2 lime
