Mint-Watermelon Popsicles

With the crazy heat this summer we needed some help cooling down. Ice cold popsicles always seem to do the trick, and this recipe for fresh minty watermelon ones seriously hit the spot. They only have a little bit of added sugar making them a healthy and sweet way to cool off! For a weekend treat throw two tablespoons of tequila into the blender for a delicious boozy popsicle!

Mint-Watermelon Popsicles

  • 4 cups diced seedless watermelon, diced in 1-inch cubes
  • 2 tablespoons sugar
  • ¼ cup mint leaves, minced
  • pinch kosher salt

Using a blender puree the watermelon and sugar until smooth. Add in the mint leaves and salt and puree until mixed throughout. Pour mixture into 8 popsicle molds (or 2 ice cube trays). Put popsicle sticks in one hour into freezing. Freeze until hard, at least 3-4 hours. Enjoy!
